Building on Japanese tradition, Global has developed a double-sided version of the Kiritsuke within the Classic series. The Global – G-106 Kiritsuke knife of 24 cm is a versatile knife suitable for various cutting tasks. It can be used as an alternative to a Gyuto or Chef’s knife, but is also perfectly usable for the functions of a Nakiri and Sujihiki. Thanks to the less curved edge, the knife is ideal for a precise “push and pull” cutting technique, while the sharp point is excellent for fine chopping and precise slicing.

- Patented Cromova 18 steel : Global knives are made of Cromova 18 steel, an exclusive type of steel that provides a fine grain structure and exceptional sharpness. This steel has a hardness of 58 HRC, which keeps the blade sharp for a long time and makes it easy to sharpen.
- Designed by Komin Yamada: Komin Yamada is a Japanese designer who was commissioned by Yoshikin in 1985 to create the first series of Global knives. His innovative design combined traditional Japanese forging with modern manufacturing techniques, resulting in knives known worldwide for their exceptional sharpness, balance and hygienic, seamless construction.
- Convex ground blade : The blade of the Global knives is convex ground, which means that the edge has a U-shape instead of a V-shape. This makes the edge stronger and the knife stays sharp longer. To keep the knife in top condition, use a sharpening stone for periodic maintenance.
- Perfectly balanced design : The hollow, sand-filled handle provides a balanced grip, while the characteristic dimpled structure provides extra grip, even with wet hands. This makes long-term cutting comfortable and precise.

Maintaining your Global knife
Cleaning : Although the knife is made of stainless steel, we do not recommend cleaning it in the dishwasher. High temperatures and aggressive detergents can damage the steel. Wash the knife by hand and dry it immediately to extend its lifespan.
Regular Sharpening : Use a whetstone or ceramic sharpening steel to maintain the sharpness of your knife. This will help you keep cutting effortlessly and precisely.
Proper storage : To optimally protect your knife, we recommend storing it in a knife block, on a magnetic strip or in a special knife cover. This prevents damage and extends the life of the blade.
